Bacon, Cheese and Broccoli Salad

I searched and searched for this recipe I created a few years ago and I am so glad I found it, because the season is here to make it again!

Low Fat, no eggs, gluten free

I LOVE this salad, I could eat it all myself!

What You need;

2 Stalks of Broccoli
1 Sweet Onion
1 lb of Low Sodium Turkey bacon
1 cup dried fruit (I used Raisins)
2 cups Shredded mild cheddar (reduced fat)
2 cups non fat plain yogurt
2 TBSP Fat Free Raspberry Pecan Dressing (I use Ken's)
1/2 cup Stevia in the raw (Crystals)

What to Do:

Cut Broccoli florets down to small sections. Add stalks in small portions if desired.
Fry Bacon, drain, cool and break into small pieces
Cut onion into small pieces

In a medium sized bowl, mix the broccoli and onion,
Toss in the bacon, fruit and cheese and mix well
Sprinkle with Stevia
Mix dressing and yogurt together in separate container then add to mixture.
Chill for 1 hour.

Makes approximately 4 cups
