German Chocolate Shortbread Bars Gluten Free
Shortbread Ingredients
1 1/2 cup GF flour
1/2 cup Sugar or Stevia
1/2 tsp salt
1/4 tsp baking powder
1/2 cup butter
1 egg white
1 tsp ice water
Instructions
Preheat the oven to 375 degrees. Using a Mixer, whisk together flour, sugar, salt, baking powder then cut in cold butter until mixture resembles coarse crumbs. Mix in egg yolk and ice water and continue blending until well combined.
Press the mixture into the bottom of an ungreased 9-inch square baking dish. Bake until golden Brown, 30 to 35 minutes. Let cool 30 minutes
German Chocolate Topping
2⁄3 cup brown swerve or sugar
1 cup pure maple syrup
2 large eggs whites
1⁄4 cup butter
1⁄4 teaspoon salt
2⁄3 cup chopped pecans
2⁄3 cup semi sweet mini chocolate morsels (add more or less to preference)
1⁄2 teaspoon vanilla
2 tablespoons GF flour
Topping Instructions:
Beat eggs in Mixer
Combine sugar and syrup in a pot and simmer on the stove for 5 minutes.
Cool and add to beaten eggs.
Slowly add remaining ingredients.
Pour over the partially baked dough and bake at 450 degrees for 10 minutes.
Reduce heat to 350 degrees and continue to bake for 20 minutes longer.
Cool and cut into squares.
